  1. Lightly cook the onions and garlic in butter.
  2. Add flour and cook to sandy stage.
  3. Gradually add the milk and bring to the boil, simmer 40 minutes. Correct seasonings.
  4. Mix egg yolks and cream together and lightly whisk into soup. Remove from heat.
  5. Serve with toast covered with grated cheese.
