Ingredients
- 750g onions, finely chopped
- 2 garlic cloves, crushed
- 75g butter
- 75g flour
- 1.5 litre milk
- salt
- pepper
- 4 egg yolks
- 10 pieces of bread, thin toasted slices
- 150g cheddar cheese, grated
Directions
- Lightly cook the onions and garlic in butter.
- Add flour and cook to sandy stage.
- Gradually add the milk and bring to the boil, simmer 40 minutes. Correct seasonings.
- Mix egg yolks and cream together and lightly whisk into soup. Remove from heat.
- Serve with toast covered with grated cheese.
