Ingredients
- 100g celery, diced
- 100g onions, diced
- 100g leeks, diced
- 100g butter
- 2 litre chicken stock
- 12 white peppercorns, crushed
- 1kg pumpkin, peeled and diced
- salt
- 150ml cream
- 75g small pasta shells
Directions
- Lightly cook celery, onions and leeks in the butter.
- Add the stock and peppercorns, bring to the boil.
- Add the pumpkin and simmer for 40 minutes.
- Pass soup through a mill, then a fine strainer.
- Reheat, correct seasonings, finish with cream.
- Serve with a garnish of pasta shells poached in milk.
