Purèe of pumpkin

Directions

  1. Lightly cook celery, onions and leeks in the butter.
  2. Add the stock and peppercorns, bring to the boil.
  3. Add the pumpkin and simmer for 40 minutes.
  4. Pass soup through a mill, then a fine strainer.
  5. Reheat, correct seasonings, finish with cream.
  6. Serve with a garnish of pasta shells poached in milk.
