Ingredients
- 75g carrots, diced
- 75g onions, diced
- 75g celery, diced
- 75g leeks, diced
- 100g butter
- 250g whiting fillets, skinned
- 750g prawns
- 50ml brandy
- 150ml white wine
- 2 litre fish stock
- 1 boquet garni
- 12 peppercorns, crushed
- 150g tomatoes, peeled and pipped
- 125g rice
- salt
- 150g cream
Directions
- Lightly cook the carrots, onions, celery and leeks in the butter.
- Add the whiting and prawns and cook for 2-3 minutes.
- Add the warmed brandy and ignite, pour in the wine and reduce.
- Moisten with the stock, add boquet garni, peppercorns and tomatoes, allow to boil.
- Add rice, simmer for 45 minutes.
- Pass soup through a mill, then a fine strainer.
- Reheat, correct seasonings and finsih with cream.
- Garnish with dice of prawns.
