Prawn and whiting bisque

  1. Lightly cook the carrots, onions, celery and leeks in the butter.
  2. Add the whiting and prawns and cook for 2-3 minutes.
  3. Add the warmed brandy and ignite, pour in the wine and reduce.
  4. Moisten with the stock, add boquet garni, peppercorns and tomatoes, allow to boil.
  5. Add rice, simmer for 45 minutes.
  6. Pass soup through a mill, then a fine strainer.
  7. Reheat, correct seasonings and finsih with cream.
  8. Garnish with dice of prawns.
