Ingredients
- 500g potatoes, peeled and chopped
- 400g leeks, chopped
- 1.5 litre strong chicken stock
- 120g button mushrooms, sliced
- 250ml cream
- salt
- pepper
- 20g chives, finely chopped
Directions
- Place potatoes and leeks into the stock and simmer for 40 minutes.
- Add mushrooms and cook for further 5 minutes.
- Pass through sieve or mill to puree.
- Reheat and season.
- Add the cream and serve garnished with chives.
