Ingredients
- 2 tablespoons Canola Oil
- 400g Barramundi Fillets, cut into 2 1/2 cm pieces
- 150g snow peas trimmed
- 225g can sliced water chestnuts, drained
- 400g Fresh honey soy sauce
- 250g Traditional noodles
- 1/2 cup toasted nuts for stir-fry, Cashews
Directions
- Heat 1 tablespoon oil in the wok over medium to high heat. Add half the fish. Stir-Fry for 1 to 2 minutes until tender. Remove from the pan. Repeat with remaining oil and fish. Remove and set aside.
- Add Snow Peas and Water chestnuts to wok. Stir-fry for 1 to 2 minutes or until snow peas have turned bright green. Return fish to the wok with Honey Soy Sauce. Gently stir-fry (being careful not to break fish up) for 1 to 2 minutes or until heated through.
- Meanwhile place noodles in a bowl. cover with boiling water anf stand for 2 minutes. Drain noodles well.
- Place noodles in serving bowls. Spoon over stir-fry. Sprinkle with cashews. Server immediately
