Ingredients
- 60g bacon, diced
- 60g onions, finely chopped
- 2 garlic cloves, crushed
- 50g dripping
- 600g Haricot beans, soaked overnight and boiled
- 200g carrots, finely diced
- 1.5 litre chicken stock
- salt
- pepper
- 200g parmesan cheese, grated
- 10g chopped parsley
Directions
- Lightly fry the bacon, remove and set aside.
- Cook the onions and garlic in the bacon fat and dripping until soft.
- Add haricot beans, carrots and stock, simmer for 30 minutes.
- Correct Seasonings.
- Serve garnished with cheese and chopped parsley.
