Ingredients
- 500g Pork Strips
- 200g Snowpeas, trimmed and blanched
- 1 small (650g) Pawpaw, peeled, chopped
- 1 tablespoon Fresh Ginger, finely grated
- 1 punnet (125g) gourmet sprouts
- 1 Clove Garlic, crushed
- 1 tablespoon Olive oil
- 60ml Chicken Stock
- 1 Lime, juiced
Directions
- Combine pork strips, ginger and garlic in a bowl; refrigerate, covered for 10 minutes.
- Cook pork strips in batches in oiled pan on high heat for 2-3 minutes or until lightly brown and just cooked through.
- Combine pork, Snowpeas, gourmet sprouts, pawpaw and parsley in a large bowl; drizzle with combined lime juice, olive oil and chicken stock; season to taste. Toss well.
