Ingredients
- 100g flour
- 200g prawns
- 200g scallops
- 100g mussels
- 250g firm fish (e.g. schnapper)
- 300g butter
- 5 garlic cloves, crushed
- 1kg tomatoes, blanched, peeled and chopped
- 100g spring onions, cut into 2cm pieces
Directions
- Gently flour seafoods.
- Heat butter and add seafood and garlic and cook until sealed.
- Add the tomatoes, heat through.
- Finish with spring onions.
Note
This dish would have to be prepared shortly before serving to ensure seafood remains moist and full of flavour.
