Eggs foo yong

Ingredients

• 690g Eggs
• 300g blanched bean sprouts
• 300g chicken, julienne
• 15g spring onion tops, finely sliced
• 10ml soy sauce
• clarified butter

Directions

1. Lightly whip the eggs.
2. Mix all Ingredients together except the butter.
3. Place the clarified butter into a large saute pan to a depth of 2cm and heat.
4. Portion the mixture into the butter and brown on both sides.
5. Drain on kitchen paper and serve hot.

Handy Hints

• May be served on hot rice with soy sauce
