Ingredients
- 690g Eggs
- 300g blanched bean sprouts
- 300g chicken, julienne
- 15g spring onion tops, finely sliced
- 10ml soy sauce
- clarified butter
Directions
- Lightly whip the eggs.
- Mix all Ingredients together except the butter.
- Place the clarified butter into a large saute pan to a depth of 2cm and heat.
- Portion the mixture into the butter and brown on both sides.
- Drain on kitchen paper and serve hot.
Handy Hints
- May be served on hot rice with soy sauce
