Ingredients
- 300g butter
- 300g flour
- 2 litre milk
- 2 litre chicken stock
- 5 lemons, juiced and grated rind
- 500g watercress, tied in bunches
- 500ml Cream
- salt
- pepper
Directions
- Melt the butter, add flour and cook to sandy stage.
- Gradually add milk and stock, stirring until boiling.
- Add lemon rind and watercress. Simmer for 10 minutes. Remove watercress and chop finely for garnish.
- Add lemon juice and cream, correct seasonings.
- Add watercress, heat gently and serve.
