Cream of watercress

Directions

  1. Melt the butter, add flour and cook to sandy stage.
  2. Gradually add milk and stock, stirring until boiling.
  3. Add lemon rind and watercress. Simmer for 10 minutes. Remove watercress and chop finely for garnish.
  4. Add lemon juice and cream, correct seasonings.
  5. Add watercress, heat gently and serve.
