Ingredients
- 100g celery, diced
- 100g onions, diced
- 100g leeks, diced
- 100g butter
- 2 litre milk
- 1kg green asparagus
- salt
- pepper
- 100g tapioca
- 150ml cream
Directions
- Lightly cook the celery, onions and leeks in the butter.
- Add milk, asparagus, salt and pepper and allow to boil.
- Add the tapioca, stirring until boiling.
- Simmer for 1 hour, pass through a mill, then a fine strainer.
- Reheat, finish with cream and serve garnished with small green asparagus tips.
