Cream of green asparagus

Directions

  1. Lightly cook the celery, onions and leeks in the butter.
  2. Add milk, asparagus, salt and pepper and allow to boil.
  3. Add the tapioca, stirring until boiling.
  4. Simmer for 1 hour, pass through a mill, then a fine strainer.
  5. Reheat, finish with cream and serve garnished with small green asparagus tips.
