Cream of cauliflower

Directions

  1. Lightly cook celery, leeks and onions in butter.
  2. Add flour, cook to sandy stage.
  3. Moisten gradually with milk and stock.
  4. Bring to the boil and add cauliflower.
  5. Simmer for 40 minutes, pass through a mill, then a fine strainer.
  6. Reheat, correct seasonings, finish with cream.
  7. Serve with a pinch of chervil and sprigs of cauliflower.
