Ingredients
- 200g celery, diced
- 200g leeks, diced
- 200g onions, diced
- 200g butter
- 200g flour
- 2.25 litre milk
- 2.25 litre chicken stock
- 2kg cauliflower
- pepper
- salt
- 200ml Cream
- chervil
Directions
- Lightly cook celery, leeks and onions in butter.
- Add flour, cook to sandy stage.
- Moisten gradually with milk and stock.
- Bring to the boil and add cauliflower.
- Simmer for 40 minutes, pass through a mill, then a fine strainer.
- Reheat, correct seasonings, finish with cream.
- Serve with a pinch of chervil and sprigs of cauliflower.
