Ingredients
- 2 teaspoons oil
- 250g skinless chicken breast fillet cut in strips
- 1 1/4 cups (310mL) water
- 1 packet continental asian rices, chinese
- 2 cups broccoli florets
- 1/2 cup sliced baby corn
- 1/4 cup cashew nuts
Directions
- Heat oil and brown chicken.
- Add water and bring to the boil.
- Stir in Asian Rice, Broccoli and corn, cover and simmer gently for 10 minutes.
- Stir well, replace lid and allow to stand for 2 minutes before serving.
- Serve sprinkled with cashew nuts.
Handy Hints
- Stir through chopped water chestnuts before servings
- Serve with your favourite stir-fry dishes
- Substitute 2-3 cups stir-fry vegetables for the broccoli and baby corn
