Chicken and Mushroom Soup

  1. Lightly cook the celery, onions, and leeks in butter.
  2. Add flour and cook to sandy stage.
  3. Gradually add the stock, bring to the boil and simmer for 30 minutes.
  4. Add the mushrooms and simmer for 15 minutes.
  5. Pass through a mill, then a fine strainer.
  6. Immediately before serving, add beaten egg yolks and cream.
  7. Correct seasonings and garnish with chicken, tongue and lightly fried slices of mushroom.
