« HomeChicken and Mushroom Soup

Ingredients
- 100g celery, diced
- 100g onions, diced
- 100g leeks, diced
- 100g flour
- 2 litre chicken stock
- 500g mushrooms, sliced
- salt
- pepper
- 300g chicken breasts, cooked and sliced
- 100g cooked lambs tongue, cut into strips
- 100g butter
- 4 egg yolks
- 150ml cream
Directions
- Lightly cook the celery, onions, and leeks in butter.
- Add flour and cook to sandy stage.
- Gradually add the stock, bring to the boil and simmer for 30 minutes.
- Add the mushrooms and simmer for 15 minutes.
- Pass through a mill, then a fine strainer.
- Immediately before serving, add beaten egg yolks and cream.
- Correct seasonings and garnish with chicken, tongue and lightly fried slices of mushroom.
