Ingredients
- 500g shortcrust pastry
- 250g mild cheddar cheese, grated
- 200g celery, finely sliced
- 100g onion, finely sliced
- 60g green caspsicum, finely sliced
- 110g eggs
- 250ml milk
- 3g salt
- 5g celery salt
- 5g garlic salt
- 1g pepper
Directions
- Line pie plates using half the pastry and bake blind.
- Mix together cheese, celery, onion and caspsicum.
- Blend eggs, milk and seasoning together.
- Pour over celery mix and stir.
- Place mixture into pie cases and cover with remaining pastry, sealing the edges well.
- Perforate the top of each pie to allow steam to escape.
- Bake at 230℃ until pie begins to brown, then at 150℃ for a further 15-20 minutes.

- 1 x 20cm pie plate = 4 portions.
