Ingredients
- 250g shortcrust pastry
- 90g butter
- 200g onions, sliced
- salt and pepper
- 40g flour
- 300ml milk
- mustard (hot)
- 120g blue vein cheese, crumbled
- watercress
Directions
- Roll out pastry to line 20cm flan cases. Roll out trimmings and cut into 1cm strips for decoration.
- Melt 2/3 of the butter in a pan and cook the onions until tender. Add salt and pepper, then remove onions from the pan.
- Melt remaining butter, add flour, cook out, gradually add milk to make a sauce, add mustard to taste.
- Stir in onions and cheese.
- Pour into pastry cases, arrange pastry strips to form a lattice work on top.
- Bake at 220℃ for 15 minutes, then at 170℃ for a further 15-20 minutes - decorate with watercress
