  1. Roll out pastry to line 20cm flan cases. Roll out trimmings and cut into 1cm strips for decoration.
  2. Melt 2/3 of the butter in a pan and cook the onions until tender. Add salt and pepper, then remove onions from the pan.
  3. Melt remaining butter, add flour, cook out, gradually add milk to make a sauce, add mustard to taste.
  4. Stir in onions and cheese.
  5. Pour into pastry cases, arrange pastry strips to form a lattice work on top.
  6. Bake at 220℃ for 15 minutes, then at 170℃ for a further 15-20 minutes - decorate with watercress
