Blue Cheese Mouse

Ingredients

Directions

  1. Mix the cheeses with partially whipped cream and almonds.
  2. soften gelatine in cold water, then disolve over hot water.
  3. Stir the gelatine into cheese mixture and season.
  4. Fold in stiffly beaten egg whites, then pour mixture into suitable moulds. Refrigerate to set.
  5. Unmould and decorate with cherries and lettuce.
  6. Serve with thin toast and butter.
